Mango ShrimpPosted by in Food
I often make this recipe with chicken, but recently I gave it a try with shrimp and it was fantastic. Buy your mangoes a couple days ahead so they can ripen. I love this dish because it’s sweet and creamy, but with a kick and it cooks so quickly.
- ½ cup yogurt
- 2 garlic cloves
- ⅛ cup lemon juice
- ¼ fresh cilantro
- ¼ cup fresh parsley
- 1 tsp paprika
- 1 tsp cumin
- ¼ cup olive oil
- salt and pepper to taste
- 1 lb shrimp, peeled
- 2 mangoes, peeled, diced
- Cooked rice
- Place the yogurt, garlic, lemon juice, cilantro, parsley, paprika, cumin, olive oil and salt and pepper in the food processor and blend completely.
- Marinate the shrimp in this mixture for 2-4 hours.
- Place in an 8x11 baking dish and bake at 400 for 15 minutes, or until the shrimp is cooked through.
- Serve with rice and mangoes.

This shrimp dish sounds absolutely delicious. I’m trying it this weekend!
I so miss shrimp! My hubby has discovered he’s allergic so it’s off the menu at our house. This sounds so good.
