Yogurt Chicken and Escarole SaladPosted by in Food
I wasn’t cooking dinner for one, but I decided to try the dinner for one recipe from July Living. It was simple and sounded terrific. You’re supposed to make the chicken as kebabs, but I just used whole breasts. You marinate them in yogurt and lemon juice and dill. I let mine sit overnight, then I grilled them.
The salad is escarole mixed with fresh corn and a vinaigrette (I used some dressing I had mixed up earlier in the week that was slightly more complex). I loved this meal. Really loved it. The chicken was moist and wonderful. The salad was fresh and crunchy with just enough sweetness from the corn. The kids wouldn’t eat the salad of course. Sigh. But at least I was a happy camper.

I wish I was better at the marinating thing. I just don’t plan ahead enough these days. Dinner is usually just something I can throw together … last minute.
I know the flavor would be better, if I did a few simple things.
This sounds easy and good.
I am that way a lot too. But the Martha project has forced me to plan ahead somewhat.
the mix of lemon, yogurt, and dill is such a awesome combination. goes perfectly well with chicken. nice choice!
This makes me want to get a grill. Any advice about how to buy a grill without breaking the bank? Is your grill worth it to you?
We have a gas grill and I use it a lot in the summer. In the winter I have a JennAire and use that pretty often too. I don’t know anything about charcoal grills at all but I imagine they are cheaper. You could even get a little hibachi type grill.
