Shrimp Guac
Posted by in FoodI made this for a holiday party over the weekend and it was delicious!
2 tomatoes (I used tomatoes off the vine), diced
1 jalapeno pepper, diced
1/4 large onion, diced
1 tbsp fresh cilantro, chopped
1 garlic clove, chopped
1/4 cup fresh lime juice
1 1/2 avocadoes, diced
1/2 to 3/4 cup cooked shrimp, cut into small pieces (buy the smallest shrimp you can find and cut into small pieces, same size as your tomato and avocado dices)
1/4 light sour cream
Serve with tortilla chips (I used blue corn tortilla chips). I love the added decadence of the shrimp in this!

Sounds yummy! I had never thought of adding shrimp. Will try. I like that you use cilantro.
I like cilantro. Some people hate it, so if you do, just eliminate that from the recipe!
My avocados are just starting to go off – I’ll have to give this a try. I’d never have thought to put shrimp in guac! (And I DO use cilantro.)

My kids won’t eat shrimp. So this is one of those recipes I have to make when they’re not home…
I’m not a shrimp person at all – wonder if you can just drop the shrimp out. I do love avocados.
