I love spinach, so I was happy to see Sauteed Spinach with Crisp Pancetta in the March issue of Martha Stewart’s Everyday Food. This is super simple. You cook up some pancetta, then remove it from the pan. You cook your spinach in the grease, salt and pepper it, add the pancetta and squeeze some lemon juice on top. Quick, simple and very tasty!
