I ran into this new entry in the produce department and couldn’t resist. I paid $4.99 for the bunch, but wait! Not only do you get the roots, but the tops are just regular parsley, so it’s like getting a bunch of that too.
I peeled the roots and roasted them with some carrots (about 45 minutes with 1 tablespoon oil, plus salt and pepper, then drizzled balsamic vinegar before serving). It tasted just like parsnip to me, but with a little bit of parsley flavor. They were fun to try. Have you tried this veggie?

They are lovely coated in a small amount of honey, chili and a tiny bit of salt and oil, and roasted. Just wonderful, one of my favorite root vegetalbes. Try with a bit of goats’ cheese and some walnuts too – add those towards the end of roasting time, just to toast the walnuts and melt/brown the cheese. Nirvana!
Have never tried parsley root but you surely inspired me! It’s one of those things I would pass by in the produce department because I don’t know what to do. Next grocery run includes a new vege, thanks to you.

“Goat cheese is good with just about anything!” – Ain’t that the truth?! 🙂 The local supermarket sells it in huge logs for only 140sek/kilo (that’d be erm… $9.50/1lb), which is expensive to just eat but not too much to keep around as instant make-food-great sort of thing. 🙂

Never knew of parsley root — not surprised to hear they taste like parsnips (which I love) since they look so similar.
