Freezing Kale
Posted by in FoodOk, I’ll admit it. I don’t really love kale. Yeah, I know how great it is for you, but I just can’t come to grips with eating it. I bring home lots of kale from the CSA. Fortunately, my son’s tortoise eats some of it. I like kale chips, but I don’t want to eat them all the time. I don’t want to waste it, so I cut off the stems, boil it, drain it, food process it and divide it into sandwich bags. I add some water to each, so that it will freeze like the block of chopped spinach you get at the store. I freeze it and then I use it throughout the year in place of frozen chopped spinach in recipes. You would never notice the difference. It’s particularly great in lasagna.

Hmm, good idea. I don’t care for kale and thought the bitter taste would translate to my lasagna or other recipes. Thanks for the heads up, I might give it another try.
I had no idea you could freeze kale! I must admit that I have grown to LOVE it. I even found kale chips in Whole Foods that are chocolate-dusted (cocoa, actually). Before you say, “ew” you should try them…they are delicious.
