I whipped up this quick, simple, summer veggie dish and it was delicious.
1/4 cup chopped sweet onion
2 ears of corn, kernels cut off
2 cups arugula
pinch dry mustard
salt and pepper
1/2 garlic clove, chopped
2 tbsp chicken stock
1/4 cup shredded Swiss cheese
Cook the onion in a little olive oil until translucent. Add the rest of the ingredients and cook until the arugula is wilted and the cheese melted. I wasn’t kidding! It is simple!

Timely recipe as we have both ingredients at the Co-op. We’ll have this for dinner tonight!
I’ve been looking for simple veggie side dishes and this sounds great. I really like the zippy flavor of arugula.
If this dish tastes as delicious as it looks, I’m cooking it. Arugula is one green that I don’t use much. Now I know what to do with it.
