We eat a lot of asparagus here since my dad has an asparagus bed. Soon there will bags of it being sent over here. While I love it, I’m always looking for new ways to make it. This recipe is so easy and really tasty:
1 bunch asparagus, trimmed
1/4 cup light bleu cheese dressing
salt and pepper
That’s it. Place the asparagus on the parchment, drizzle the dressing over it and season it with salt and pepper. Fold up the parchment and bake for 20 minutes at 400.

I love asparagus. How lucky you are to have such a constant supply! And this can’t be any easier. Asparagus and bleu cheese…what a great combo.

Talk about easy! In addition to the bleu cheese, what other sauces would you recommend to change it up a bit?
I like pesto with some parmesan cheese. Asparagus is also good with just butter and lemon.
I’m envious of your easy access to asparagus. We love it, though my kids will only eat the tops. I like the idea of trying asparagus with blue cheese!
I do love asparagus and while it grows wild around here in the orchards, I stick to the organic variety from the local food co-op (who knows what’s been sprayed in those orchards). I did try growing it one year, to no avail – maybe time to try again. And I never thought about combining bleu cheese and asparagus, but it sounds totally yummy.
Envious of your asparagus bed! I’d love to get one started on our property one of these years. And to pair it with blue cheese, another of my favorite flavors… can we grow a blue cheese tree too? 🙂
We planted an asparagus bed this year. It is autumn here, so we need to whack it down and hope it winters well. We love asparagus AND bleu cheese, so I’m sure this will go into regular rotation when our asparagus bed comes into production.
I hope it grows well for you. I remember it took a couple of years for my dad’s to really get going, but it was worth the wait. His is actually waning now. It’s probably more than 25 years old and I guess it doesn’t last forever.
Ha ha. That would be great. I’ll look for that at the nursery while I’m looking for that money tree I need. We actually had a watermelon tree once – the watermelon vines in our garden grew up a tree next to it!
I didn’t know it grew wild. Interesting. I agree about the orchards and spraying though.
My mom and her brother used to fight over the tops. When my mom boils asparagus she separates the bottoms from the tops and cooks the tops for a shorter time.

Count me in the crowd who are envious of your endless asparagus supply. Love this veg fairly unadorned but also a big blue cheese fan, so will have to try this recipe.
