Veggies in Parchment
Posted by in FoodI’m really into this cooking in parchment paper concept. My latest foray is veggies in parchment, which is in Jan/Feb Everyday Food. This could not be simpler! Put asparagus, broccoli and snap peas on a piece of parchment paper. Sprinkle olive oil over it. Fold the paper over it and twist the ends. Bake at 375 for 10 minutes and you have lovely veggies, with no mess to clean up.

I never thought of this type of preparation. It sounds wonderful. I bet the flavors really emerge nicely.
Looks wonderful. I’m wondering how environmentally friendly parchment paper is, I’m going to have to do a little research this morning!
I know that parchment does not contain BPA or obviously aluminum (foil) – so it is good to cook with without any added chemicals. Though, when you cook this way, you cannot reuse it in anyway. I do wonder if it is recyclable? I will occasionally reuse the paper if I use it as a liner.
Thanks Brette – I have been cooking a lot more with parchment because of you! Since my 2 year old will eat ANYTHING! – we had the Salmon and green beans (and brussel sprouts) a few times since you posted the recipe.
Parchment paper can be recycled in some areas – it depends on what they will accept where you are. It can also be composted.
