Tis the Season for Apple Crisp
Posted by in FoodThis week’s Martha Mondays got me craving plain old apple crisp, so I got to work and made one for my family, and also for my parents since my dad was having some surgery done. I make apple crisp the way my mom and grandmother did. We usually just dump, but I measured so I could share it here.
I made an 8×8 pan:
5 apples, peeled cored and thinly sliced
1/2 cup water
salt
cinnamon
1/2 stick unsalted butter
1/4 cup flour
1/4 cup whole wheat pastry flour
1/4 cup sugar
1/4 cup brown sugar
1/2 tablespoon cinnamon
Preheat the oven to 350 and spray your baking pan. Lay the apples in (you don’t have to go nuts and make it all symmetrical, just distribute them evenly). Pour the water over them then sprinkle with some salt and cinnamon. Place the rest of the ingredients in the food processor and whiz until you’ve got coarse meal. Spread that over the top. Bake for about an hour and 15 minutes.

We are having a friend coming up on business tomorrow from Fla. so I thought I would make him a good old apple pie, with good northern apples. But, maybe I’ll make the crisp instead. Thanks!!
Main dish is crabcakes, our Chesapeake specialty. (I’m in WDC area.)
Oh, the crab cakes sound good! I would kill to have some with fresh crab, not canned pasteurized! Have fun with your friend!
Apple crisp is my favorite dessert, bar none! I love how it smells while it cooks.
I love apple crisp, but tend to use oatmeal and sometimes a few notes. So what is the difference between apple crisp and apple brown betty?
Apple brown Betty traditionally has layers of apples alternating with layers of buttered breadcrumbs. I find that a lot of people use the terms interchangeably. Apple crumble is also considered to be about the same thing. Apple pandowdy, slump, grunt or cobbler has fruit on the bottom and crust or biscuit dough scattered on the top.
I know, I do too.
This recipe is very similar to the one I made my kids. I think my recipe includes nutmeg. That’s the only difference. I was heartened when my grown son requested the recipe the other day to make it for his kids! That’s one great recipe that crosses generations.
This recipe is so easy. Just peel and cut up apples and whiz the topping in the food processor and dump. Pretty foolproof. Anyone can do it.
I love the crispy part the best…hot, with ice cream on top. Yummy!
