Quinoa Salad
Posted by in FoodI’ve been trying to incorporate quinoa into our diet more frequently since it is packed with nutrients. My latest dish was a quinoa salad. This is a recipe you can play with. Use whatever you have on hand or what you’re in the mood for (ideas include cucumber, carrots, green beans, etc.). My herb garden is currently suffering a setback (it was trampled by some workers we had here), otherwise I would use fresh herbs: dill, cilantro, parsley, oregano, mint, or basil would all be fantastic in this little salad.
- 1½ cups cooked quinoa
- ½ cup frozen corn, or fresh corn cut off the cob
- 1 green onion, sliced
- 2 tomatoes, diced
- 2 avocados, diced
- ¼ cup olive oil
- 3 tbsp lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon dried Italian herbs
- salt and pepper to taste
- ½ teaspoon sugar
- Mix quinoa and vegetables in a bowl. Mix oil, lemon juice, mustard, herbs, salt, pepper, and sugar and pour over the salad, tossing to coat.

Oh, this looks heavenly. I’ve been trying to eat more of this as well since going to an all-plant based diet. My husband doesn’t like it, though, so have to find something for him when I make it for myself. This looks like a great lunch recipe for me.
I will have to try this salad. Sounds perfect for the hot summer weather that lies ahead.
We had some trouble adjusting to it also. I think that if you think of it as a substitute for rice or couscous or pasta, then it isn’t good. But if you look at it as a different food completely, then you can appreciate it. I know it can be a tough sell though sometimes!
I need to bring quinoa into my arsenal. It is so high in protein and so good. Thanks for the recipe.

I’m a big fan of quinoa, of course I’m southern so it seems a lot like grits to me. On winter mornings, I like cooking up quinoa, adding a little butter and asiago cheese – yum. I’m definitely trying your salad.
That sounds good. I never thought of it as being like grits.
