Potato and Zucchini Hash from May Martha Stewart Everyday Food was our pick for today, chosen by At Least Twice a Week. I love potatoes and am always looking for something new to do with zucchini. This recipe was pretty simple – fry up 2 potatoes (peeled and sliced thinly in small pieces) with half a sliced onion. Once the potato is cooked, add in 1 thinly sliced and cut zucchini. Salt and pepper it to taste. Martha says to serve with fried eggs, but I skipped that.
Very simple, and very good! I liked this, even though it sounded sort of weird (potatoes and zucchini?). It worked well as a dish though and was easy to put together. I love it when Martha has me try something new and I am pleasantly surprised.

I didn’t end up making it as my family said they wouldn’t eat it 🙁 So I made a pie with the zucchini I bought that turned out gross 🙁 Next time I’ll go ahead and make the Martha Monday pick anyway. This really looks good!
This looks wonderful and I bet would have been good with the scrambled eggs as well. Thanks, you’ve given me a new dish for our zucchini harvest later in the summer!

Yes, I think so. I was serving it with a pork tenderloin though and didn’t want the eggs. This would make a nice lunch with th egg on it I think.

we often pair potatoes with summer squash in all sorts of ways, tend to prefer it to zucchini.
I never would have thought of putting them together.

We had it for brunch and it was really good with the egg on it. It’s a good recipe with or without the egg.
Yum, this looks tasty. At a restaurant recently, I had a veggie enchilada and it had zucchini, potatoes, onions and black beans inside. It was so good. I tried it at home and my kids loved it.
