This week’s project was chosen by Pru at Perfecting Pru. Maple Bacon Quiche sounded good,
but I am fan of quiche in general. Maple and bacon can also do no wrong in my book.
I started making this much later than I should have, but I put the oven on convection and we were able to eat dinnerbefore it was time to go to bed:) First up was the pate brisee. This made a lot of pie crust. In fact, it uses twice as much butter and almost twice as much flour as my usual recipe for pate brisee. I’m not sure why Martha wanted the crust so thick and so big. You make the crust and then bake it separately. Then you cook bacon, and cook some onion in a little bacon grease, adding maple syrup. That all gets mixed with egg, cream and thyme and goes into the pie shell.
I thought it was very good. Mr. MarthaAndMe thought it had too strong of a maple flavor. I also thought it seemed very rich – it’s mostly egg, cream and bacon! I’m used to quiche that has vegetables in it, so this was a heavier version. It looked pretty with the bacon sprinkled on top.

Hi! I saw this recipe and decided it would be too heavy and rich and too much maple syrup. So, by your efforts, I guess I was right! Thanks! (Not that I don’t love quiche.)
Yes, somehow it just wasn’t a traditional quiche which I always think of as a light dinner along with some salad or fruit!
It was fine in the pie crust that I used in mine. Of course most quiche has eggs and cream and cheese, unless you want to use lowfat. Yours looks mighty tasty! I just posted mine as well.
I usually use skim milk in quiche, substitute egg beaters for one of the eggs, and usually add spinach, mushrooms, zucchini, and sometimes broccoli. I like a lot of veggies in mine. There was a lot of bacon in this I thought!

Oh my gosh – everyone make sure you go read Sarah’s post. What a disaster! Congratulations Sarah, on reaching the level of disaster I have reached in the past with Martha!
We liked ours, but it sure was heavy on the cream, eggs and butter. But I am so pleased that I did try it. I think we would have it again, we teamed ours with salad so it didn’t seem so unhealthy!
