BBQ Meatloaf
Posted by in FoodIf you’re looking for a low fat meatloaf, this isn’t it. If you’re looking a meatloaf that will make you drool and cause your children to fight over who gets the last piece, this is it.
This meatloaf feeds 4, but if you want leftovers, you will have to double it!
1 small onion, minced
1 garlic clove, minced
6 baby carrots, chopped
1 tsp olive oil
1 lb ground beef
1 egg
1/4 cup ketchup
1 tsp Worchestershire sauce
1 tsp yellow mustard
1/2 tsp BBQ seasoning or rub (I use Penzey’s)
1/2 cup crushed BBQ potato chips
1 tsp breadcrumbs
Cook the onion, garlic and carrots in the oil until softened over medium high heat. Mix all ingredients in a bowl until well combined. Press the meatloaf into a greased loaf pan and bake at 400 for 25-30 minutes until it reaches 165 degrees on an instant read thermometer.

When I saw the headline for BBQ meatloaf, I just had to come over and check it out. Being from Kansas City, we love BBQ and my husband is a big meatloaf fan, but I get tired of cooking it the same way all of the time. This looks awesome!
I love meatloaf but so far I haven’t been able to convince my hubby to be a fan. Maybe this recipe will do it!

What an interesting recipe! I never heard of using BBQ potato chips in meatloaf, or much of anything else, for that matter. I’ve got to try this.
