Artichoke Dip with Fontina
Posted by in FoodWhen I made this recipe from March Everyday Food, Teen Martha gushed, “I love dips!”
I made this for dinner and we really enjoyed it. It was rather simple to throw together and was a nice different thing to have with dinner. You start by cooking onion (1/2 medium onion) and garlic (3 cloves) in oil. You add in the canned drained artichoke hearts (3 cans) and white wine (1/2 cup)and cook until the wine evaporates. Stir in light cream cheese (4 oz) and fontina (2 1/4 cups), add some parsley and bake for 30 minutes at 400. While that bakes you brush some pita triangles with oil and bake them until they are crisp about 15 minutes. This was warm and yummy. And I felt totally justified eating it since artichokes ARE a vegetable!

I agree, any dips with artichokes is counted just as a vegetable, right!? 🙂
I made this for our Meatless Monday lunch at work. Everyone loved it. It was yummy! I don’t think my family would eat it though. My husband thinks artichokes are a “girl” food. Whatever.
The onions and garlic are good for you, too. And since the cheese was lowfat, this might actually qualify as health food…
well the fontina wasn’t low fat, but a little cheese never hurt anyone!
It was great, wasn’t it? Put some bacon in it – then he would eat it. Mr. MarthaAndMe liked the idea of bacon in it.
Maybe I should make a spinach dip next. Teen Martha would be thrilled.

Spinach and artichoke dips are non-existent here in Kiwiland, but I LOVE them. Too much. Baffled at the idea that artichokes are “girly”.

This looks fabulous. I love artichokes and my kids love dips. (They eat their vegetables when they have something to dip them in!) So this is a recipe we’ll be trying!!

Looks amazing. I LOVE fontina in just about anything. But I must admit artichokes are not my favorite. Is there a possible substitute? Maybe fontina-spinach dip?

Oh yes! I was just thinking today that I need to find out what time the Oscars are on and see if I can justify not making dinner and instead making some lovely snack-y things instead. If the husband gets to pull that for the US-Canada Olympic hockey game, then I get to for the Oscars! And of course, we set a place for George Clooney.
Just made this dip for our neighboorhood Easter egg hunt and party and it was a huge hit!!! So easy. I pretty much followed the directions, but didn’t have enough cream cheese, so I just used a few tablespoons and a 6oz package of plain Greek yogurt. Also added a few tablespoons of parm. cheese. Fantastic! Thanks for the great recipe!
