Chicken Salad with Pea Shoots
Posted by in FoodI recently found a source for pea shoots and now I’m finding lots of ways to use them. They are fantastic just on sandwiches. I wanted to find a way to have them for dinner though, so I can up with this fantastic (and easy!) chicken salad
1 poached chicken breast, cut into 1/2 inch pieces
1 small cucumber, peeled and sliced thin
1 small shallot, chopped
1 tbsp chopped parsley
10 thin slices of zucchini, chopped
1 tsp stone ground mustard
3 tbsp light mayo
salt and pepper
2 tsp good olive oil
1/2 tsp white vinegar
2 cups pea shoots
Mix the chicken and vegetables in a bowl. Add everything else except pea shoots and stir. Refrigerate. Cut the pea shoots into quarters, and toss. Place pea shoots on plate and top with 1/3 of the salad. (Serves 3)

I have never tried pea shoots. I will have to look for them this summer. Nice chicken salad here, just the way I like it.
I’ve looked all over for them and finally found them at the health food/natural foods store. They sell them year round. They’re grown in a greenhouse in PA apparently.
This recipe looks really wonderful, but I have a question; I can never find shallots at my grocery store. Do they go by another name? Or do you have to get them at the Farmer’s market?
No, they’re called shallots. I get them at my store. They are with the onions and garlic. They look like a cross between an onion and garlic – a little smaller than a head of garlic and brown. They’re just like a mild onion, so you can swap it out for a sweet onion or green onions if you can’t find it.
yum. Got to try this one. I’ve never had pea shoots – next time I’m at the store, I’ll look for them.
This actually made my mouth water. I know what I’ll be fixing for dinner this weekend!
What a perfect recipe for a day when it’s so hot (and only early June!) that I feel defeated just looking out the window.
I don’t know that I’ve eaten pea shoots. How do they taste?
I’ve failed quite a bit growing peas in the greenhouse. Maybe I should just grow the shoots. Thanks for the idea.

This looks like the perfect light summer lunch. And it’s lunchtime here, and I’m wishing I had this in front of me.
I like the addition of the zucchini. And of course the pea shoots sound so tasty with this mix of flavors.
I just chopped up the remaining ones and put them in a quesadilla I made of leftovers – chicken, spinach, mushrooms, asparagus and fontinella cheese. It was fantastic
