Today’s project was chosen by Lyndsey at Tiny Skillet: Zucchini Lasagna. I haven’t had lasagna in a while, so this was a welcome dish. I scratched my head reading the recipe though. There’s no tomato sauce in it at all. It’s noodle, ricotta/cream cheese mix and zucchini. Well that wasn’t going to fly here at Casa del MarthaAndMe, so I cheated and added some tomato sauce to mine. I also added mozzarella cheese on each layer instead of just on the top. Ok, and I added a few broken up meatballs too. So maybe I doctored it up quite a bit, but I’m glad I did. It was yummy and it would not have been good without all those extras. I liked the zucchini in it. I often add veggies to my lasagnas – whatever I have hanging around, like spinach, mushrooms, or broccoli.
I cut this recipe in half and made a second lasagna for Teen Martha without any zucchini since she was horrified at the thought. Dude Martha refused to eat either and I boiled some spaghetti and he ate it plain (blech).
Remember there will be no Martha Mondays for the next two weeks, but we’ll be back8/23 with a pick from At Least Twice a Week.

I’m pleased that you made lots of modifications Brette, as that is certainly what we needed in our house. My only addition was sliced onion. This was too dry and wasn’t fully cooked in the allocated time. My results are up: http://www.perfectingpru.wordpress.com.
I can’t wait to get back to Martha Mondays after a two week break. Is the year anniversary soon here?
I could tell just from the recipe that it wasn’t going to be great. I mean who makes lasagna without sauce? The two year anniversary of my blog will be at the end of October. Going to check out your results next!
I’m making mine tomorrow and admit that I’m adding sauce too.
Oh gosh, I guess I’m in the minority here, we LOVED this!!! I made it exactly as written but I didn’t use the no boil lasagna, I used regular whole-wheat lasagna (as that’s what I had), boiled them for 5 minutes only and let them finish cooking in the oven. I have no idea if that had anything to do with how much we liked this.
We found it very creamy and cheesy, not dry at all. It all got eaten and I’m thinking about making it again soon.
I just couldn’t face “lasagna” that had no red sauce. Maybe if I thought of it as a pasta dish it would have worked for me.
You know what Brette, I’ve been thinking. I think the reason mine was so creamy and cheesy (and not dry) was because I did use the “regular” lasagna noodles. I THINK (I could be wrong) the no-boil kind suck up all the sauce or moisture or whatever. Just a guess on my part but I find it odd that mine was so creamy and no one else’s was. The only difference was I used regular lasagna noodles. Just a thought….
I finally posted mine, my internet was down. I liked it too and we didn’t need any red sauce. That’s what I liked about it. I did make a few changes, which I think this recipe allows. Just added more garlic, herbs and a pinch of red pepper flakes.
Yes, I think you’re right. The no boil ones do have to suck up moisture from what else is in the dish.
Oh and I just wanted to add that I really enjoy cooking with all of you on these projects. It’s so fun to come and find out what everyone else thought of the recipe, how it turned out for others, and what tweaks people added. I’ll miss you guys the next two Mondays, and am looking forward to our next project on 8/23!

Zucchini lasagna is now my twin boys’ official lasagna favorite! lol! I was apprehensive the first time I made it, you know how kids are with veggies. But then, surprisingly, they both love it! They even rate it 5, we have this rating system (5 being the highest)in reviewing mommy’s cooking, lol! Hmmmm, now, I’m thinking asparagus and pumpkin next time, lol!
