Parmesan Rice
Posted by in FoodMy family likes rice a lot. I almost always make brown rice in my steamer. We often eat it with just some butter on it or the sauce for whatever the main course is. I have a favorite, decadent rice dish that I make once in a while though, called Parmesan Rice. It’s incredibly simple but just fabulously delicious. I made it last night, but used some jasmine rice I had left in the cupboard.
Parmesan Rice (serves 4)
1 1/2 cups of rice
6 tbsp butter
3/4 cup Parmesan cheese
Cook rice according to package directions or however you usually make rice. I prefer to make this recipe with brown rice. Once the rice is cooked, put it in a square baking dish. Brown the butter and spoon over the rice. Sprinkle the cheese on top and cover the dish with foil. Allow it to sit for several minutes, until the cheese melts.
The brown butter gives this dish a wonderful nutty flavor and the cheese – well, cheese makes almost everything better! This dish can be made in advance and then reheated in the microwave. It also works well for large family gatherings – just double or triple the recipe. I almost always double this recipe when cooking for the 4 of us because we just love it so much.

parmesan rice sounds really yummy. for some reason for me, cheese and rice seems kind of off-putting but you have to kind of think of it as carbs and cheese… sort of like pasta and cheese. i am definitely willing to try it out. i am a big fan of risotto so this should not be a problem.
The brown butter really is the key to the whole dish. It does not taste like rice somehow with this ingredient.
Oh, I wish. After eating that last night, I am definitely on the carrots and celery plan today.
This sounds really good and such an easy side dish. My daughter loves rice, she usually just sprinkle it with some Japanese furikake. She love Parmesan too so this should work!

Sounds delicious! I usually eat rice plain but this sounds too tempting. I bet a tiny bit of chopped parsley would make a great garnish.
I’ve always loved cheesy rice. We do risottos quite often, but this would make an easier side dish than that.
I love cheesy rice too — and what an easy recipe. Maybe the whole grain goodness of the brown rice cancels out the fat in the cheese and butter? (Actually, I think fat is probably good for you…)
I love it with brown rice. The rice itself has such a nutty taste, combined with the brown butter, oh it’s wonderful.

This recipe is so simple and yet sounds fabulous. I’ve always had a little trouble not burning the rice, instead of browning it. Any tips?
Use a steamer. I have a veggie steamer that has a bowl for rice. It says on the side of the machine how much water to use and how long to cook for. It is perfect every single time. Lots of people have rice steamers that are great too. Mine was cheap though – maybe $20? And I use it to steam veggies often too if I don’t want to turn on the stove and get out a pot and the little steamer shelf.

This is a winner. I have my own variation but it’s off the cuff, so it’s nice to have some measurements to go by.
