Snap Peas with Tzatziki
Posted by in FoodHere is another one of my weeknight, “I need a veggie, but I want something different” creations.
2 cups snap peas
2 tbsp tzatziki sauce
salt and pepper to taste
Mix together and bake in parchment packet for 15 minutes at 400 degrees. Serves 4. It’s that simple. The snap peas retain enough crispness that they are fun to eat. The tzatziki gives it a creaminess and a nice tang. I really loved this and will be making it again.

You are so creative with food. This looks like another great way to get my husband to eat his veggies!
I have to admit it but I am not familiar with that sauce. I do love snap peas and our farmers’ market will be opening soon, so I will pick up a bottle of sauce on your recommendation.
Alexandra–make your own tzatziki with plain yogurt and shredded cucumber. Its easy, very, very Greek and very, very tasty!
What a great and creative combo! I need more excuses to use tzatziki, which I love.
I usually make my own too. I add lemon juice, salt, and a bit of olive oil to the yogurt and cukes. And some ground pepper.
It is very fresh and clean tasting and easy to make yourself (see the comment from Vera and my response)
