Salmon with an Interesting Sauce
Posted by in FishIt was one of those dinners where there wasn’t much to choose from, so I sort of chose everything. And the results were pretty amazing.
2 salmon fillets
1 cup snap peas
1/4 cup light sour cream
1 tbsp honey mustard
1 tbsp lime juice
4 baby carrots, minced
salt and pepper
1/4 tsp dill
Preheat oven to 400 degrees. Place the salmon on the parchment and place the peas on top and around it. Mix the other ingredients in a bowl then pour over the top. Fold the parchment and bake for 20 minutes.
It has a very interesting sweet/sour taste and is loaded with veggies so you can have a nice portion and know you’re getting lots of the good stuff.

Love the combo of sweet / sour. This looks terrific. I might try the sauce alone next time I make salmon patties.

We love salmon, and eat it so often, that I’m always looking for variations. This sounds great. Next time there’s some sour cream left….
Aren’t the snap peas just amazing right now? My hubby isn’t a salmon fan, what other fish would you recommend–tilapia?

I would say it is quite all purpose really. And you could substitute in a lot of ways – use lemon juice instead of lime, cilantro instead of dill, regular mustard instead of honey mustard, etc
Yes, this would work with most white fishes.
You could use plain yogurt instead of sour cream in this as well
You could definitely make this on the grill – wrap the parchment packet in foil and put it on.

curious to know where you source your fish and why you choose the kinds you use (salmon, grouper, etc.) since i’ve been covering the sustainable seafood beat of late.
Any time we have salmon it is a special dinner. I’m wondering how much salmon goes for where you are.
We have salmon from our trip to Alaska last year where my husband son caught some. I don’t make grouper often at all, hardly ever. It’s not available in my area much. I buy fish at the grocery store or the fish market.
I’m a big fan of salmon. And I like mustard so this recipe sounds great.
