Loosen those belts – the pick for next week’s Martha Mondays, chosen by Megan at Megan’s Cookin’ is Chocolate Marble Quick Bread with Ganache.

Thanks to Robyn at Robyn’s Nest for today’s pick, healthy mac and cheese.  I was intrigued by this recipe and as soon as I read it, I knew that my friend Ward at Sensei Cooks would love it. Ward has a 6 yr old son named Dylan who loves mac and cheese and Ward routinely sneaks things into it. So this would be perfect for you, Ward!

To make this recipe, you cook butternut squash in milk and chicken broth and then mash it. Boil your noodles and mix the mashed squash, cheddar cheese, parmesan cheese, ricotta, nutmeg, salt, and pepper into it. Top with bread crumbs and cheese and bake.

It looks like mac and cheese but doesn’t taste the same. It’s not very cheesy at all and the squash flavor dominates. I did not tell the family what this was – just that it was mac and cheese. Mr. MarthaAndMe said he liked it. Dude Martha said it was ok. Teen Martha said “this is weird” and knew something was up. She is the family mac and cheese connossieur. Once I fessed up what was in it, she pushed it away and wanted no part of it. The other two family members weren’t horrifed.

This recipe made a LOT. So I’m freezing a bunch and hoping it reheats ok. As for me, I thought it was ok, but it wasn’t mac and cheese. It was a squash/pasta dish. I don’t think I would make this again, although we will definitely eat up the leftovers. And I might cheat and put a little more cheese on it when I heat it up!

Maple granola. Yum. You can thank MaryAnn at Stirrin It Up for this week’s recipe, which is on page 24 of Feb Living.

I like granola a lot, but have not been eating much of it lately since I can’t eat a lot of nuts. This only elevated my craving for this recipe. I have to admit, I was a little leery of it since it has coconut (the recipe says to use coconut chips – no idea what that is, so I just used regular coconut flakes) and raisins in it, neither of which I am a fan of. This granola has lots of yummy stuff in it – rolled oats, pecans, maple syrup, olive oil, sesame seeds, nutmeg, and brown sugar. It takes about 50 minutes to bake this slowly in the oven, but it is really worth it.  I loved it. It is delicious and amazing (once I picked the raisins out).  Everyone in the house gave this a thumbs up. Mr. MarthaAndMe groused a little, saying he expected bigger pieces of granola, but he got over it once he tasted it. I would definitely make this again.

Thanks to Teresa at Homemade Iowa Life, the project for 1/11 is Instant Antique Glass, page 48 of January Martha Stewart Living. If you don’t have the magazine, you need some kind of glass vase, or votive holder, etc, a spray bottle with water and mirror paint in a spray bottle.

You need to work in a ventilated area. Clean the glass and cover the outside with paper. Spray the inside with water then the mirror paint. Turn it upside down on a drying rack so air can circulate and let it dry completely overnight. You can repeat if necessary. The result should look like mercury glass.

I love mercury glass, so I can’t wait to see how this turns out.

We’re going to hit the pause button on Martha Mondays until after the holidays. Some members have suggested it and I agree. So the next Martha Mondays will be Jan. 4.
