Martha Mondays
Posted by in Martha MondaysToday’s recipe, Creamy Cauliflower Soup with Greens, was chosen by Ashley at Elizabeth March Design and can be found in January Living. I was apprehensive about this soup. It sounded really, really bland and really really veggie. I thought it wasn’t too bad, and the fact that I threw in a rind from some Parmesan cheese probably helped it. I had some trouble getting it completely blended – there were some strings in it. No one but me would eat it. Mr. MarthaAndMe took one taste and said no thanks. I only made half a batch, so I didn’t have too much left. I am planning to doctor it up and have it for lunch some day this week. I don’t think I would ever make it again, however. What did everyone else think?

I would imagine that the cheese helped a bit, but the lack of stock put me off, and eventually I changed the recipe to a Nigella one. I sometimes think that recipes can be too healthy for their own good.

Yes, I know what you mean. I’m going to add some cheddar to it and some cream and have it for lunch today with some toast maybe. I do like the idea of a bowl of soup that is all veggie, but it just needed more flavor I thought.
I’m with Pru, about being too healthy fortheir own good…don’t get me wron, I like eating healthy and all, but using broth would add a lot and shouldn’t hurt that much. I’m with you Brette, cheddar or any cheese sounds good too!
I added chicken broth instead of water, and the soup tasted good!
I’m hoping to get to this later. My son is sick with a virus and I just can’t get to the store for the ingredients. Thanks to all your comments I will use chicken broth 🙂

I made this soup last night and found it very bland. However, I added some extra sea salt, pepper, crushed red pepper flakes and once reheated it really brought out the cauliflower and kale. Drizzle of olive oil on top was nice as well. Good with some crusty bread. I think in the future this would be nice as a starter vs the main.
