No Pot Grills
Posted by in FishIt’s that time of year, when turning on the oven seems like a bad, bad idea and cooking on the grill sounds great. There are still no pots involved, so here’s what I made for dinner last night:
Grilled Cod and Green Beans with Cilantro Sauce
1 piece of cod (about 1/2 lb)
2 cups green beans
1/4 cup cilantro leaves
1 tbsp olive oil
salt and pepper
1/8 of a sweet onion
juice of 1/2 a lime
1/2 tsp honey
2 tbsp nonfat plain yogurt
Season the cod and beans with salt and pepper then grill them (use a grill tray for the beans to keep them from falling through the grates. The beans take about 12 minutes, depending on the heat of your grill (you want them to look slightly soft and browned). The cod will cook in about 10 minutes, if it is about an inch thick. Look for it to become opaque. Add all other ingredients to a mini food processor and chop. Remove food from grill and use the sauce on top.

Yum I love the zest that cilantro gives to sauces–especially over grilled meat. I’ll have to give this a try.
I used it again on grilled salmon later in the week. It’s also really good on potatoes.
We need to replace the burner on our little propane grill before we can do any outdoor cooking here. Since we’ve had significant snow (through last week), it doesn’t even feel like spring yet … let alone summer.
We did that last year – replaced the burner and the grates. And then our neighbor got a giant shiny silver monstrosity that ours looks like junk compared to!

I wish it weren’t so cold and rainy here. Unfortunately, turning on the oven seems like a good, good idea since our skies are so overcast. That said, this recipe sounds fabulous! (But I will sub parsley for cilantro as cilantro is just not on my A-list of flavors… I feel somehow taste bud deficient to be admitting it but it’s true…)

I just read an article in Web MD magazine about how there are some people who simply hate cilantro, and if you don’t like you, you REALLY don’t like it.
I’m not really a fish person, but I’d make an exception for this yummy dinner.
Yep, definitely that time of year when my grill becomes both my regular stovetop and oven! I bet this sauce would also be great over a chopped salad.
Some people say that cilantro tastes like soap. I don’t get it, but if my palate reacted that way, I wouldn’t eat the herb either.
