I like to grill shrimp, but I don’t enjoy threading them onto skewers, so I usually end up tossing the shrimp onto a grill pan so they won’t fall through the grates. On a recent night, I doctored my shrimp up to make it into a delicious Italian dish.
- 1 lb shrimp, peeled, deveined
- ¼ cup olive oil
- ¼ cup lemon juice
- salt and pepper to taste
- 1 tbsp Italian herbs
- 1 garlic clove, minced
- 1 clamshell cherry tomatoes
- Toss all ingredients together in a bowl and allow to marinate at least one hour, up to four.
- Cook on a grill pan over a hot grill, until the shrimp are cooked through and the tomatoes start to break.
