Quinoa Salad
Serves: 6
 
Ingredients
  • 1½ cups cooked quinoa
  • ½ cup frozen corn, or fresh corn cut off the cob
  • 1 green onion, sliced
  • 2 tomatoes, diced
  • 2 avocados, diced
  • ¼ cup olive oil
  • 3 tbsp lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon dried Italian herbs
  • salt and pepper to taste
  • ½ teaspoon sugar
Instructions
  1. Mix quinoa and vegetables in a bowl. Mix oil, lemon juice, mustard, herbs, salt, pepper, and sugar and pour over the salad, tossing to coat.
